Colombia: Parilla Colombiana

Every Sunday rural colombia turns into a roadside assortment of parillas or barbecue. Colombian hang around these and grill all day and it’s a total cholesterol-overloading, annual fat-dose equivalent amount of grilled meats consumed in one day. Sausages, roasted pork of all kinds and of course chiccharron! The latter is truly Colombian obsession – large slabs of fatty pork belly meat and rind deep-fried and grilled to complete crispness – oh so delicious but most certainly not good for you.
