Mexico/Jalisco: Tequila – Agave Landscapes

The beautiful landscapes around Tequila of the endless fields of blue agave and the Volcan de Tequila in the background are actually listed as a UNESCO World Heritage site. Over 36k ha of blue agave fields around Tequila, Arenal, and Amatitan with distilleries where the agave hearts are fermented and distilled are all part of the UNESCO designation. The cultivation of blue agave began around the 1600s, when the Spanish started distilling the drink here. What defines the tequila drink are two things: the blue agave content (must be 51%, but best houses produce 100% blue agave premium tequila), and the origin – Jalisco state around Tequila (and a couple other small spots in the three neighboring states).
