In Bangui, we got to try absolutely insane river fish – grilled whole Nile perch – was absolutely delicious, served with cassava and grilled plantains. Street food – grilled goat – was also fantastic. Other truly local dishes are peanut soup and fufu (pounded cassava), as well as chicken in peanut sauce and more grilled fish (catfish and tilapia). Central African Republic grows awesome pampelmuse (white grapefruit or pomelo), it’s available everywhere and is super juicy. There are also a couple beers, including one truly local – Mocaf – and a few pan-west-african. Finally, bushmeat is still widely eaten all over the country, we saw load and loads of bushmeat offered for sale along the roads – gazelles, river rats, turtles., water monitor lizards, and even monkeys.
