Chad: Roadside Grills – Camel & Mutton
The most insane culinary adventure true in Chad are not at some fancy capital city restaurants (which probably don’t even exist), but at large communal grill shops in the capital and along th major roads. Here you get choosers meats slow grilled for hours over embers – camel meat and mutton legs and ribs – just absolutely insanely delicious! Grilled Camel (Viande de Chameau) is a definite Chadian specialty, and it taste completely unlike beef – the meat is very lean and yet huge juicy and soft – there is an earthy undertone, almost like a cross between a very lean grass-fed sirloin and a hint of dark-meat turkey (especially when some camel hump fat is added to the grill). Mutton Legs (Gigot d’Agneau) is also legendary amazing – slow-roasted over embers, the exterior of the leg develops a salty crust, while the interior remains tender and pulls away from the bone. And for the adventurers (we did it!), you can try the offal (intestines) firea-grilled and as sausages. All of this is complemented with baguette bread and whole onion cloves
