In the central Ecuador, the cuisine is dominated by the Andes – hearty, warming dishes centered around pork, potatoes, and corn. Classic dishes are locro de papa (thick potato and cheese soup served with slices of fresh avocado), hornado (slow-roasted whole pig marinated in beer and spices), fritada (chunks of pork braised in orange juice until the liquid evaporates and the meat fries in its own fat), and of course – cuy – roasted guinea pigs, they are much bigger in size here then in neighboring Peru.
