France: Chablis

Chablis is a small medieval town with cobblestones streets and historic architecture. But it’s much more famous for the wine region that lies around it – Chablis. the regions has unique terrain and soils that result in super crisp and citrusy white whine (the soils are Kimmeridgian limestone, rich in fossilized oyster shells). The Chablis wine is strictly limited to the area and is 100% Chardonnay grapes to earn the DOP designation. Chablis is further divided into four appellations . Petit Chablis is light, fresh, and fruity, usually drunk young. Chablis: is the core appellation, crisp, with mineral-driven citrus notes. Chablis Premier Cru comes from better vineyards. And the wine is more complex, with greater aging potential up to 10 years. Finally, Chablis Grand Cru is the top tier from just seven vineyards sites, rush and concentrated, and aged to over 15 years).
