Gambia: Oyster Farms on Gambia River
The Gambia River is home to extensive mangrove forests, which provide ideal conditions for oyster farming. Oysters are traditionally harvested by hand from the mangrove roots during low tide. The oyster harvesting season typically runs from March to June. Oysters are shucked and then boiled and sold cooked, nobody is eating raw oysters here since the warm water are probably not very safe to consume filter-feeding creature raw. Shucked shells form mountain at the waterfront of the mangrove swamps. Eventually they are ground into fertilizer.
