Haitian the food is a mix of French influences and creole – spicy and hearty! Haitian pikliz if marinated and fermented very spicy cabage (almost as hot as Korean counterpart), chicken soup was delicious, acra was another local specialty as was plato creole with rice djon djon (colored black by local wild mushrooms). Roast goat was delicious, raw conch ceviche was more of an acquired taste. And nothing beats freshly caught red snapper, grilled whole with creole spices.
