Iraq: Iraqi Food Recap
While Iraq has a long history of half a dozen civilizations, the cuisine mostly revolves around the standard Arabic fare of kabobs, mezze appetizers, rice and chicken dishes, kodta, falafel, fatoush, and so on. But a couple truly unique Iraqi dishes stood out – masgouf (fire-roasted carp fish), quzi (slow-roasted baby lamb with three varieties of rice and nuts), ans makhlama (a breakfast dish of fried eggs mixed in a skillet with beans and spices).
