Japan/Kyushu: Kyushu Food Recap
The southernmost of the bug Japanese island, Kyushu is well known in the country for its unique and rich cuisines, deriving on abundance of redemptive and huge diversity in dishes that reflect its rich agricultural and coastal resources. Some of the most famous of the Kyushu specialties is Tonkotsu Ramen – the broth is made by simmering pork bones for hours, resulting in a rich, creamy consistency – it is to die for and we ate a lot. Next specialty was Mentaiko – salted and marinated marinated pollock or cod roe – we had it fresh, salted dried, on baguette, and every which way and every day! Next was Basashi, a Kumamoto specialty – thinly sliced raw horse meat sashimi. Finally – whale sashimi! And there was so much more sashimi, sushi, rolls, ikura roe, uni, local variation of guoza, karashi renkon lotus root, oysters, and more, and more.
