Kiritimati: Eating Milkfish
We were told to try the local delicacy on Kiritimati – milkfish. Since there are really no restaurants on the island, and fishing lodges mostly cook a very generic and boringly overpriced junk-fare, it wasn’t an easy task to try milkfish. We had to find a local fisherman with a fresh overnight catch of milkfish (fish is sold for $1 per 1 cm of length), buy one, and have it grilled. Milkfish is a tropical fish, they are primarily herbivorous, feeding on algae, plankton, and other small organisms. Milkfish are quite bony, but with a sweet tender and flaky and very delicious flesh.
