The cuisines of the two Sahel countries are similar in many respects – the main dishes are grains (rice, millet, sorghum), accompanied with morsel of meat (goat, beef, chicken or mutton), and a sauce to top it all off (peanut, baobab, palm nut oil, etc). Also, pretty good Niger River grilled fish (Nile perch or catfish) . Much more interesting are the grilled and smoked meat from various roadside or hidden in downtowns authentic smokehouses. Lamb or beef or goat are grilled and then wrapped in paper and smoked for hours, served with onion and spicy pepper sauce – just absolutely fantastic, and unique at every place you try.
