Mali/Burkina/Niger/Chad: Sahel Countries Food Recap

The Sahel is the name for the arid area below the Sahara – Mali, Burkina Faso, Niger, and Chad share this vast and expansive territory. All for countries are Francophone and former French colonies. The food is somewhat similar with certain differences in each country. Typically, it is fresh water fish (Nile perch or catfish) with rice or grilled chicken or fish brochettes. Grilled lamb and goat are also coming. Most upscale restaurants and hotels usually serve French dishes with a bit of a local twist. Each of the Sahel countries makes their own licensed versions of Beaufort and Castel beers as well as have typically one specifically local domestic brand. All four are majority Muslim so alcohol is not common.
