Mexico/Michoacan: Pollo a la Lena in Michoacan Highlands
As we drove into the next state of Michoacán en route to the highland forests of the Monarch Butterfly National Reserve, we spotted many roadside stops of wood-fires rotisserie chicken all named “Pollo a la Lena”. The whole chicken looked bright oranges and absolutely delicious so we had to try! And then stopped for some more! The chicken were slow roasted over wood fires with local specialty rub of orange spices and grilled white onion and cactus leaves. The meat was super tender and moist and juicy and not spicy at all. While grilled chicken is served all over Mexico – this particular preparation is typical of only highlands of Michoacán.
