Mexico: Northern Mexico Food Recap
Northern Mexico food (Chihuahua, Coahuila, and Nuevo León states) is different from most of the rest of Mexico – traditional agriculture didn’t get here as to the fertile Mexican middle, and fish is far away – so most of the arid desert and high mountains land is used for cattle and ranching. Hence, barbecued meats and grilled meats dominate the menu – sometimes it felt like there is a million different variation of asada – grilled meat. Surprisingly great wines and sotol – similarly prepared like mezcal or tequila but using a different type of aloe that grow wild only in the northern desert – this stuff was awesome and fuerte!
