Papua New Guinea: Mount Hagen – Cooking Sweet Potatoes in the Ground

People hardly use pots or pans in the Papuan Highlands – sweet potatoes are usually cooked in the ground. Multiple layers of banana leaves, hot rocks and charcoal create a perfect cooking atmosphere. Plantains are cooked similarly. Just one hour in the earth stove and delicious meal is ready. Cooked this way, sweet potatoes can last for a week.
