Philippines/Mindanao: Davao City – Roxas Night Market
At night, the central part of Davao City between the cathedral and the People’s Park turns into a giant night market (fully gated and monitored by police). Rows and rows of street food including all the Mindanao specialties like tuna jaw. Sugba is the local term for grilling, and there are a lot of stalls that offer grilled fresh seafood, various fish and crustaceans, chicken and chicken parts like the liver, gizzard and intestines. Mindanao is mostly Muslim, so all the food here is halal, no pork. Roxas Night Market is a very authentic cultural experience.
