Philippines: Southern Philippines Food Recap
The Southern Philippines – Mindanao and Viscayas – have slightly different cuisine and many unique dishes. In mostly Islamic Mindanao – there are a lot of halal bbq places grilling seafood and beef. Tuna jaw is a particular local specialty and is really jaw-dropping delicious. Then there is kinilaw and siniglaw – the former is raw fish ala Philippine version of ceviche, while the latter is a mix of raw fish and grilled pork belly – both absolutely insanely amazing and typical of Mindanao and Viscayas. Viscayas is also famous for its lechon.
