Taiwan: Eating whole tiger frogs

One of the stalls at the Huaxi night market had frogs on it – black and white tiger frogs, palm-sized, gutted but otherwise intact. Right behind it there were tables where you could order, sit, and wait for a spicy frog soup with a full frog “swimming” in it. I couldn’t resist. No, it didn’t taste like chicken, meat is very tender and lean, and be ready for a lot of bones.
