. A lot of meals were at lodges and safari camps where they ranged from western-style dishes to local Tanzanian specialties that we made sure we kept requesting – like the ever-present traditional Ugali, or Ndizi kuku (chicken with banana and spices), or Sukumawiki (green leaves of some local plant) or Pilau (rice with beef chunks). In Dar-es-Salaam and the beaches it was delicious seafood like barracuda (raw or grilled, octopus, and other fish. Pineapple is in season now and it’s the juiciest imaginable. Oh, and we tried the baobab fruits.
