Croatia: Mali Ston Oysters

Ston Oysters are often called the best in the world and consistently beat both Atlantic and Pacific oysters of all types in taste tests. Oysters have been farmed in the Mali Ston Bay since the times of the Romans. Must be the chilly crystal clear water off the Dalmatian coast. The annual production is ~2mln oysters 30k tons of mussels. At any rate, I had 6 dozen of them over several meals, and they were incredible. One place was a working oyster farm and you literally go out to oyster beds and pick your own oysters! Just insane! Also, another local specialty is Morska Jaja (literally sea eggs), a bizarre shellfish resembling oyster in looks, sea urchin in taste, and sea cucumber to touch. Very weird tasting, but worth experimenting.
