Gabon: Njole – Eating Coupe Coupe Barbeque Meat
The quintessential Gabonese street food is the Coupe-Coupe barbequed meat. This is basically flank steak marinated in spices for hours and then slow roasted and smoked and afterwards kept partially submerged in juices and marinades and partially foiled. The name comes from the French “coupe” which means “cut”. The meat is cut to order by long curves knifes and served with cut onions and some spices. It’s absolutely tender and delicious. We tried it a riverfront market in Njole.
