Spain/Andalusia: Seville – Seville Food Recap

Seville is the capital of the Andalusia region of southern Spain and such is representative of the Andalusian cuisine as well as having some distinctly Sevillian dishes. And like everywhere else in Spain the variety and dishes and tastes and presentation (via tapas or larger entres is just mind boggling – especially after Ireland). Things that stood out and are a must try are: salmorejo (a traditional cold soup from Seville with egg and jamon), Carrillada de cerdo (pork cheeks in Sevillian sauce), adobo sevilliano (marinated dogfish), cola de toro (beef tail), and tomate alinado (tomatoes with olive oil).
