Ukraine: Keleberda – Smoked & Airdried Dnieper Fish

The tiny village of Kelenberda lies on an island or a peninsula in the middle of wide-flowing Dnieper River. Fishing is a way of life here and the fish is prepared according to local traditions by salting and air-drying. The fish is mostly small river species that are not very meaty for frying, but delicious when air-dried and eaten with beer or vodka.
