Mexico: Northern Highlands Food Recap
Here we have the cuisine from the northern highland states – Jalisco, Aguascalientes, Zacatecas, Durango, San Luis Potosí, and Queretaro. All landlaocked, so not much seafood here (except perhaps in Jalisco where everything is marinated in tequila. But the hardy landscapes of deserts and mountains yield themselves to hearty portions of meat. A lot of meat!
