Mexico/San Luis Potosi: Aquismon
Once you cross the mountain range of Sierra Gorda, you come into the jungle world dominated by the wet prevailing winds from the Caribbean and one of the first towns is Aquismon. Aquismon is the gateway to the Cave of Swallows, the world’s largest single shaft pit cave. A quick walk around the town’s central square, a check on a pretty colonial church, listen to the deafening cacao hint of birds, realize there are no restaurants in town, but a roadside wood-fire grilled chicken, eat it sitting on a sidewalk, and hit the bed in your tiny hotel (one of the two in town), early night in preparation for the Cave of Swallows adventure the next morning.
