From northern Texas to Oklahoma/Kansas/Nebraska in Midwest and Great Plains to Arkansas/Missouri along the Mississippi River to Kentucky/Tennessee and finally to West Virginia/Pennsylvania – this is the recap of the American heartland – aka ribs, ribs, and more ribs. Two of the greatest American style BBQ ribs are here – St Louis Ribs (smothered in a lot of sauce) and Memphis Dryrub Ribs (with spices being dry-rubbed on the succulent meat).
